Recipes From our Saratoga B&B Kitchen

When you rise in the morning from the wonderfully comfortable beds at The Westchester House in Saratoga Springs NY, you will be greeted by the aroma of freshly baked breads, our own special coffee flavors and a variety of fresh fruits, all served on our beautiful china. When you return home, you can remember your time in our Saratoga Springs B&B by recreating one of our recipes for breakfast, brunch or dinner! In between your stays at The Westchester House, surprise your family and friends with some of these amazing treats!

Chilled Tomato Soup

2 16-ounce cans tomatoes, undrained
4 green onions with tops, minces
1 teaspoon sugar
1 tablespoon fresh parsley
1/4 teaspoon dried basil
2 cups lowfat plain yogurt

In a food processor or blender puree the tomatoes. Add the remaining ingredients and blend well. Chill for 3 to 4 hours. Serves 6.

Chicken Tetrazzini

1/2 pound mushrooms, sliced
3 tablespoons margarine
3 cups lowfat plain yogurt
1/4 cup sherry
4 cups cooked chicken, cubed
1/2 pound thin spaghetti, cooked & drained
1/2 cup grated Parmesan cheese

Grease a shallow 2-quart casserole. In a frying pan saute the mushrooms in the margarine. In a mixing bowl combine the mushrooms with the yogurt, sherry, chicken and spaghetti. Place into the prepared casserole and sprinkle with Parmesan. Bake in a 350 degree oven for 30 minutes. Serves 6 to 8.

Asparagus Topped with Crab

1 pound fresh asparagus, parboiled
2 tablespoons chopped green pepper
1 tablespoon chopped onion
1/4 cup margarine
2 cups lowfat plain yogurt
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon tarragon
12 ounces crab meat
1/2 cup grated Parmesan cheese

Place the asparagus in a 1 1/2 quart shallow baking dish. In a frying pan saute the green pepper and onion in the margarine. In a mixing bowl combine the yogurt, Worcestershire sauce, tarragon and lemon juice. Add the green pepper, onion and crab meat. Pour mixture over the asparagus and sprinkle with Parmesan. Bake in 400 degree oven for 20 minutes. Serves 4 to 6.

Veal Vermouth

1 1/2 pounds veal medallions
1/4 cup margarine
1 clove garlic, minced
1/2 pound mushrooms, sliced
1 tablespoon lemon juice
1/2 cup dry vermouth
2 tablespoons snipped parsley

In a frying pan saute the veal in the margarine. Add the garlic. Cover with the mushrooms and sprinke with the lemon juice. Pour in the vermouth and cover. Cook over low heat for 20 minutes. Just before serving sprinkle with the parsley.

Zesty Cheese Spread

2 cloves mashed garlic
2 8-ounce packages reduced calorie cream cheese, softened
1 cup margarine, softened
1/4 teaspoon pepper
1/4 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon basil
1/4 teaspoon marjoram
1/4 teaspoon dill

In a food processor combine all the ingredients until well blended. Chill for 24 hours. Remove from the refreigerator 30 minutes before serving. Makes about 3 cups.
